ROCKY MOUNTAIN WHITE TILAPIA

The Rocky Mountain White Tilapia have been developed at Colorado Gators over the past 31 years by hybridizing (cross breeding) two species of tilapia and then selective breeding for the white color. Each year the largest, fastest growing, and whitest fish are kept as breeding sock for the next year. Some of the tilapia now can reach market size (1 to 1.5 lbs.) in just 6 months! The white color makes them more appealing to the customer since people think that the native color looks similar to a carp. The flavor of the meat is the same, but the selective-bred tilapia are more cold tolerant.
